While slathering them with butter and sprinkling them with salt is a traditional way to enjoy corn on the cob, it is not the only way. This recipe offers a spin on the classic that elevates the flavor of corn on the cob while still maintaining its indulgent and delicious characteristics.

 

What You Will Need

  • Six ears of yellow corn
  • 1/2 of a cup of olive oil
  • 1/2 of a teaspoon of salt
  • 2 garlic cloves
  • 2 tablespoons of freshly grated Italian parsley leaves
  • 1/2 of a cup of grated Parmesan, freshly grated
  • A heavy small skillet
  • A large saucepan
  • Tongs
  • A platter
  • A basting brush
  • A sharp knife
  • A cutting board

 

What to Do

  • Use the sharp knife to husk and halve the corn crosswise and set aside
  • Fill the large saucepan 3/4 of the way with water
  • Set the large saucepan on high heat and cover
  • Allow the saucepan to come to a boil as you continue to cook other steps
  • Chop the garlic cloves and set aside
  • Chop the Italian parsley leaves if not already done so and set aside
  • Grate the Parmesan and set aside
  • Add the olive oil to the small heavy skillet
  • Place the skillet on medium heat
  • When heated, add the garlic to the skillet
  • Saute the garlic about 1 to 2 minutes, until it is fragrant and has become tender
  • Pull the skillet of the heat and allow it to cool for a minute
  • Add 2 tablespoons of the parmesan cheese to the garlic and oil
  • Mix the garlic and the cheese in the skillet
  • Slowly add the parsley to the skillet as you mix
  • Add the salt to finish as you continue to mix the parsley, cheese and garlic oil
  • When the saucepan has begun to boil, add the corn
  • Set the skillet aside
  • Cook the corn about 5 minutes, or until they have become crisp but tender
  • Use tongs to transfer the corn onto a platter
  • Use the basting brush to brush the cheese mix over the hot corn, allowing it to melt more as it sits
  • Sprinkle the remaining cheese on the top of the hot corn
  • Serve the corn while still hot
